Good Eats

It's been a while since I have posted pictures of things I have cooked, so I figured I would share some from this week. Wednesday night I made apricot lemon chicken. It was so good and so easy. The chicken is seasoned with curry powder, salt, and pepper and cooked on the stove. The sauce is apricot preserves, lemon juice and water mixed together and heated on the stove top.

I made these granola bars this week too, and they were so yummy. Unfortunately they didn't hold together very well, but that didn't affect the flavor. I ate way too many of these...they only lasted me a few days.


Dinner tonight was salmon with a mango-kiwi relish. You can't really see the salmon under the relish. I marinated the salmon in a mixture of honey, soy sauce, and pepper and cooked it in the skillet. The relish is mango, kiwi, cilantro, and orange juice. It was so good.

I'm off to bed...gotta get up early and run 11 miles!

Homemade granola bars are awesome! How do you make yours? Do you put them in the freezer to get them to stay together?

i haven't tried that...does it work?! I made mine with oatmeal, craisins, dates,almonds, flax seed, egg whites, canola oil, honey, and some brown sugar. they taste amazing, but just fall apart. i want to try making them using apple sauce and a little less sugar.
