Learning to Cook!

So, now that I am living in an apartment, I have a kitchen...and since I am no longer required to have a meal plan, I fix my own food. The result: I am learning to cook! During the day, I eat food that is fast and easy: cereal, oatmeal, yogurt, fruit, sandwiches, etc. I cook for dinner every night. This week, I experimented with tofu, which I love, by making a stir fry with broccoli, green beans, and mushrooms. Once it is on the plate, I add some soy sauce...delicious! It is a tasty, nutritious meal, and the good part is I can eat a full plate of it since vegetables are low in calorie! Last night I finished off the tofu and baked a sweet potato and some asparagus. I didn't cook the sweet potato long enough, but I finished it in the microwave after cutting it open. It didn't turn out the best, but it still tasted good. I added a sauce over the asparagus made of melted butter, soy sauce, and balsamic vinegar. It tasted good, but I had too much of it. I'm really enjoying cooking! Even though I am making mistakes, I am definitely learning a lot!

Still seeing a chiropractor 3 times a week and icing 4 times a day. I've been able to run with my team 3 days this week! While they were doing a workout this morning, I ran 40 minutes, which is the longest I have done! It went well, but I ran up and down quite a few hills, which wasn't the best idea. It's going to take me a while to get in the shape I need to be in, but I'm ok with that, as long as I'm able to keep running!

Tofu, I've never eaten it. I know that a cartoon show called "Doug" that I watched as a child had a song on it called "Killer Tofu" but that's all I know about the stuff. Haha.
